you could try my taco lasagna i posted. my family loves it!

Beef "enchiladas" - 1to 1 1/2 lbs ground beef, 1 can Old El Paso Enchilada sauce, chili beans, Salsa, Cheddar Cheese, large tortilla shells....preheat oven to350, mix fried ground beef with 1/2 can of enchilada sauce and 1/2 cup salsa....warm on stove...add chili beans (whatever amount you desire)...fill tortilla shells and fold....cover with remaining enchilada sauce, top with cheddar cheese, bake 10-15 minutes until cheese is melted and slightly brown.

serve with tomatoes, salsa, sour cream, onions, jalapenos...whatever you like with mexican!

one of my dh faves is taco pockets.

1 lb ground beef
2 pkg refridgerator biscuits
1 pkg taco season
cheese
sour cream
salsa

preheat oven to 450. brown ground beef and add taco seasoning. set aside. take biscuits and flatten into 3-4 inch circles. place 8 in bottom of greased bake sheet. put 1-2 T ground beef in center of each. top with cheese, sour cream and salsa if desired. top with remaining flattened biscuits and press around edges to seal pockets. bake for 20 minutes or until golden brown. they taste great, especially if you make some queso to dip them in or to accompany.

1 lb. ground beef
1-1/4 cups water
3/4 cup milk
1/3 cup ketchup
1 pkg. (12 oz.) VELVEETA Shells & Cheese Dinner
1 large tomato, chopped
2 green onions, sliced
BROWN meat in large skillet; drain.
ADD water, milk and ketchup; mix well. Bring to boil. Stir in Shell Macaroni; return to boil. Cover; simmer on medium-low heat 10 min. or until macaroni is tender.
STIR in Cheese Sauce, tomatoes and onions; cook until heated through, stirring occasionally.
