Contaminated Milk

I figured out last week that my 6 wk old can't handle it if I have dairy products, so I immediately cut it out of my diet. Yesterday, I ate lunch out and half way through my sandwich discovered a piece of cheese. Of course I immediately picked out the rest of it, but it was enough to bother my son. Within about three hours he started spittingup more, he became mucousy and by bedtime the gas began. This whole process of him feeling bad has taken about 24 hrs. My main question is how long will the dairy stay in my milk before he is free of it? Should I always keep expressed milk in the freezer in case this happens again? I'd start right now, but I don't know if I'm cleared.
