Baby Choking On Pureed Food Very Freightening

In the last week my ds has ahd 2 separate incidents where he has choked - very badly - on his solid food. Now, he's been on solids since 5 months old, he is now 8 months. I started him on very well pureed foods, and have made it slightly more chunky. But no big pieces of food. Also, he eats rice crackers, and chew small pieces of fruit. He seemed to be quite good at it, and never had a problem. Last week I was feeding him mashed potatoes - no chunks - and he choked on some and could not get it out. He went red, and watery-eyed, and made no noise, so I stuck my finger in his throat to try to scoop it out. He ended up vomiting it up, and then cried an he was fine. I was pretty shaken by it though. Then a couple of nights later he did the same thing on pureed veggies, and I almost had a heart attack. I did the same thing and he was fine. But now I find myself terrified to feed him. These were not just little incidents of gagging a bit, he was choking badly both times, and I know if I did not put my finger in his throat he would not have gotten in up. I'm just scared to feed him now, waht should I do? I've been making sure his food is absolutly mashed, but why is he all of a sudden choking? He has been chewing foods fine for weeks, and no problems and I want him to continue to learn to chew them but I am now too scared. What should I do, and does anyone know what is the best thing to do if they are choking?
