I bought a can of dry formula when dd was first born to suppliment when my milk was coming in. (used once!) Its been about 6 weeks and the can says to toss in a month of opening....but my nanny is starting and I was wondering if we could use up the can now since its only been opend once.

As long as it hasn't clumped or have a different consistency- I would use it. That stuff it too expensive to throw away. If you have had the lid on it, and it stored in a safe place- at least try it. I would....

Why would you risk it? I wouldn't.

Smell it. If the fats have started to go rancid it will smell different. Max's brand will start to get a fishy smell. I keep a small can in his diaper bag that doesn't get used on a daily basis. I try to mark the date when I open a new one. The smell willstart to change at the 5-6 week mark, so it may have already started to go bad.
