Kat21, another thing you can do is thoroughtly wash, and cut up the yucca or/and white yam (name, isu,etc) into pieces with the bark on it, wrap it up in foil paper and bake like a potatoe. when fully baked (soft centre), peel off the bark and mash with garlic, olive oil/butter, salt , cilantro and other aromatic spices that you like. serve with meat, fish and vegetable of your choice. YOu can also peel , slice and parboil for like 3 mins, and then season to tast and fry or bake like its french/steak fries. The healthiest is to boil it though, but you should definately take advantage of seasoning so as to give it some taste. additionally, you can substitute potatoes for the yam when you are making meat pies, and stews.
I eat the white yam and almost yucca everyday (tis part of my cultural staple), so I know how to cook it in almost 12 different ways!!
